### **Ingredients**  

**For the Broth:**  

- 3 cups chicken or vegetable broth  

- 1 tbsp white miso paste  

- 1 tbsp soy sauce  

- 1 tsp chili oil (or ½ tsp red pepper flakes)  

- 1 tsp grated ginger  

- 2 garlic cloves, smashed  


**For the Toppings:**  

- 4 oz ramen noodles (or udon)  

- 1 cup shiitake mushrooms, sliced  

- 2 tbsp cornstarch  

- 3 tbsp neutral oil  

- 1 soft-boiled egg (6 mins)  

- 1 cup baby spinach  

- 2 green onions, sliced  

- Sesame seeds & nori strips for garnish  


### **Instructions**  

1. **Crispy mushrooms**: Toss mushrooms with cornstarch. Pan-fry in hot oil until golden (3 mins/side). Set aside.  

2. **Broth base**: Simmer broth with miso, soy sauce, chili oil, ginger, and garlic for 5 mins. Strain.  

3. **Cook noodles** separately according to package instructions.  

4. **Assemble bowls**: Divide noodles, pour hot broth, top with spinach (it wilts instantly), mushrooms, halved egg, green onions, nori, and sesame seeds.
