Shrikhand Recipe

Indulge in the rich and aromatic flavors of this classic Indian dessert.


Ingredients

- 4 cups plain yogurt (preferably full-fat)

- 1 cup powdered sugar (adjust to taste)

- A pinch of saffron strands

- 2 tablespoons warm milk

- 1 teaspoon ground cardamom

- 2 tablespoons chopped pistachios

- 2 tablespoons chopped almonds

- Chilled fruit slices (such as mango or berries) for garnish (optional)


Instructions


1. **Strain the Yogurt**: Place a muslin cloth or a clean kitchen towel over a large bowl. Pour the yogurt onto the cloth, gather the edges, and tie them securely. Hang this setup over the sink or place it over a bowl to drain the whey for at least 4 hours or overnight in the refrigerator. This process yields thick, creamy yogurt known as "hung curd."


2. **Infuse Saffron**: Soak the saffron strands in warm milk for about 10 minutes to release their color and aroma.


3. **Prepare the Shrikhand**: Transfer the hung curd into a mixing bowl. Add powdered sugar, soaked saffron along with the milk, and ground cardamom. Whisk the mixture until smooth and creamy. Adjust the sweetness according to your preference.


4. **Chill and Serve**: Refrigerate the shrikhand for at least an hour before serving. Garnish with chopped pistachios, almonds, and chilled fruit slices if desired. Serve cold.
