Kheer is a traditional Indian rice pudding made with milk, rice, and sugar, flavored with cardamom, saffron, and nuts. It's rich, creamy, and perfect for festivals or special occasions. Here’s how you can make delicious kheer at home.  



Ingredients

- 1 liter full-fat milk  
- ¼ cup basmati rice (washed and soaked for 30 minutes)  
- ¼ cup sugar (adjust to taste)  
- 4-5 green cardamom pods (crushed)  
- 10-12 saffron strands (soaked in warm milk)  
- 2 tablespoons chopped almonds, cashews, and pistachios  
- 2 tablespoons raisins (optional)  
- 1 teaspoon rose water (optional)  

 Step-by-Step Recipe

 **Step 1: Cook the Rice**  
1. Heat milk in a heavy-bottomed pan and bring it to a gentle boil.  
2. Drain the soaked rice and add it to the boiling milk.  
3. Stir continuously on low heat to prevent sticking.  

**Step 2: Simmer the Kheer**  
1. Let the rice cook in the milk for about 30-40 minutes, stirring occasionally.  
2. Once the rice is soft and the milk has thickened, add sugar and mix well.  
3. Add crushed cardamom, saffron milk, and chopped nuts.  
4. Simmer for another 5-10 minutes until the kheer reaches the desired consistency.  

**Step 3: Serve and Garnish**  
1. Turn off the heat and let it cool slightly.  
2. Add rose water for extra flavor (optional).  
3. Serve warm or chilled, garnished with more nuts and saffron strands.
