Crispy Medu Vada Recipe
Medu Vada is a popular South Indian snack—crispy on the outside, soft on the inside, and best served with sambar and coconut chutney!
**Ingredients** (Makes 10-12 vadas)
- 1 cup urad dal (split black gram)
- 2 tablespoons rice flour (for extra crispiness)
- 2 green chilies, finely chopped
- 1-inch ginger, finely chopped
- 2 tablespoons chopped coriander leaves
- 8-10 curry leaves, finely chopped
- 1 teaspoon black pepper (crushed)
- 1/2 teaspoon cumin seeds
- Salt to taste
- Oil for deep frying
- Water as needed
**Instructions**
**Step 1: Soak & Grind the Dal**
1. Wash and soak the urad dal in water for **4-5 hours**.
2. Drain the dal completely and grind it into a smooth, thick paste using very little water. The batter should be fluffy and light.
3. Transfer the batter to a bowl and mix in **rice flour, green chilies, ginger, coriander, curry leaves, black pepper, cumin, and salt**.
*Step 2: Shape the Vadas**
1. Wet your hands with water, take a small portion of the batter, and shape it into a round patty.
2. Poke a hole in the center using your thumb to form the classic vada shape.
**Step 3: Fry the Vadas**
1. Heat oil in a deep pan over **medium heat**.
2. Carefully drop the vadas into the oil and fry **until golden brown and crispy** on both sides.
3. Remove and drain excess oil on a paper towel.
**Step 4: Serve & Enjoy**
- Serve the hot medu vadas with **coconut chutney and sambar** for an authentic South Indian experience!
**Tips for Perfect Medu Vada:**
- Grind the dal with minimal water for a thick batter.
- Beat the batter well before frying to make the vadas fluffy.
- Fry on **medium heat** for even cooking.
