Authentic Chole Bhature Recipe

Chole Bhature is a classic North Indian dish featuring spicy chickpea curry (chole) served with deep-fried, fluffy bread (bhature). It’s a favorite street food that makes for a satisfying meal!  


 **Ingredients** (Serves 3-4)  


**For the Chole (Chickpea Curry):**  

- 1 cup dried chickpeas (or 1.5 cups canned chickpeas)  

- 2 tablespoons oil or ghee  

- 1 large onion, finely chopped  

- 2 tomatoes, pureed  

- 1 teaspoon ginger-garlic paste  

- 1 green chili, chopped  

- 1 teaspoon cumin seeds  

- 1 teaspoon turmeric powder  

- 1 teaspoon red chili powder  

- 1 teaspoon coriander powder  

- 1 teaspoon garam masala  

- 1 teaspoon chole masala (optional)  

- 1 teaspoon salt (adjust to taste)  

- 1 black tea bag (for color, optional)  

- 2 cups water  


**For the Bhature:**  

- 2 cups all-purpose flour (maida)  

- 2 tablespoons semolina (sooji) (for crispiness)  

- 1/2 teaspoon salt  

- 1/2 teaspoon baking powder  

- 1/4 teaspoon baking soda  

- 2 tablespoons yogurt  

- 1 teaspoon sugar  

- 1/4 cup water (as needed)  

- 1 teaspoon oil  

- Oil for deep frying  

 

**Instructions**  


**Step 1: Cook the Chole**  

1. **Soak the chickpeas** overnight in water. Drain and rinse.  

2. In a pressure cooker, add chickpeas, **tea bag (if using), salt, and 2 cups of water**. Cook for 4-5 whistles until soft. If using canned chickpeas, skip this step.  

3. Heat oil in a pan, add **cumin seeds**, then add onions and sauté until golden.  

4. Add **ginger-garlic paste and green chili**, sauté for a minute.  

5. Add **tomato puree** and cook until oil separates.  

6. Add **turmeric, red chili powder, coriander powder, garam masala, and chole masala**. Stir well.  

7. Add the boiled chickpeas and simmer for **10-15 minutes**. Add water if needed.  

8. Garnish with **chopped coriander and lemon juice**.  


### **Step 2: Make the Bhature Dough**  

1. In a bowl, mix **flour, semolina, salt, baking powder, baking soda, sugar, and yogurt**.  

2. Add **water gradually** and knead into a soft dough. Apply oil and cover.  

3. Let it rest for **2 hours**.  


*Step 3: Fry the Bhature**  

1. Heat oil in a deep pan over **medium-high heat**.  

2. Divide the dough into small balls and roll them into **oval or round shapes**.  

3. Carefully slide the bhature into the hot oil and fry until **golden and puffed**.  

4. Remove and drain on paper towels.  


**Step 4: Serve & Enjoy**  

- Serve **hot chole** with **fluffy bhature**, sliced onions, and lemon wedges.  

 

**Tips for Perfect Chole Bhature:**  

- The **tea bag** gives the chickpeas a rich color. You can also use a pinch of baking soda while boiling.  

- **Resting the dough** ensures soft and fluffy bhature.  

- Serve with **pickle, yogurt, or lassi** for an authentic experience!
